This slice is a great way to add some extra veggies onto your plate! It's also a perfect snack for on the go, and great for lunch boxes!
Ingredients:
1 large grated zucchini - squeeze out those juices!
5 eggs
1/2 cup grated parmesan
1/4 cup grass fed butter
3/4 cup wholemeal spelt flour
3 tbps coconut flour
1 garlic clove finely chopped
1 tsp baking powder
1 tsp salt
Black pepper
Preheat the oven to 180 degrees. Line a baking tray with baking paper. Grate the zucchini and squeeze all of the juices out over the sink. In a large bowl, whisk the eggs, then add in the zucchini, parmesan, melted butter, garlic, baking powder, spelt flour, coconut flour, salt + pepper. Stir well to combine, ensuring there are no lumps. Pour mixture into the baking dish and bake for roughly 30 minutes, or until firm within.
