Slow Cooked Moroccan Lamb Shoulder

I am a real advocate for a slow cooker within the family home - it makes dinners a breeze as you can just fill up the cooker and set it and forget it! This slow cooked Moroccan Lamb Shoulder is a seriously nourishing and simple protein that served our family, with side dishes, for 3 dinners. My boys loved it and it was incredible flavour exposure for my 9-month-old baby, and also a wonderful source of iron for her. I hope your family enjoys this recipe!



Ingredients:

1.5kg lamb shoulder

1 large brown onion

2 garlic cloves

2 carrots

4 tbsp tomato paste

1 tbsp cumin

2 tsp ground coriander

1 tsp turmeric

1 tsp fennel

1 tsp cinnamon

3 tbsp olive oil

broth or water to cover

salt + pepper to taste


1) Seal the meat in a hot pan on both sides and set aside


2) Make the spice mix in a small bowl by adding all of the spices and the oil. Finely grate in the garlic. Mix well to make a paste


3) Rub the spice mix on both sides of the lamb shoulder and place it into the slow cooker


4) Finely dice the onions and place them into the slow cooker with the carrot, chopped into large pieces, and the tomato paste


5) Pour in the broth or water to cover the meat


6) Place the lid onto the slow cooker and cook on high for roughly five hours until the meat is so tender that it is falling apart. Shred the meat to serve and don't forget to stir through some of those delicious cooking juices!


We enjoyed this meat with some spiced rice and a carrot salad. The following day we had it on some yoghurt flatbreads.
