Probiotic Raspberry Gummies

This is one of my favourite gummy recipes! I love them because they are the ultimate gut loving snack as they contain both gelatin and a bunch of probiotics thanks to the kefir. They're a fun way to add some extra nourishment into yours and your little ones' diet!



Ingredients:

1 cup unflavoured kefir - I love the kefir from Table of Plenty

1 cup raspberries (I use frozen - defrosted)

2.5 tbsp gelatin

1/2 cup water

2 tsp honey


1) Add the gelatin to the water and stir. Set aside and allow it to thicken


2) Blend the raspberries, kefir and honey until combined


3) Once the gelatin has thickened, spoon it into a small saucepan and melt it over a low heat. Once melted, blend the gelatin into the raspberries, kefir and honey


4) Pour straight into your gummy moulds and set in the fridge for at least two hours before consuming


* If your kefir is quite cold it may cause the gelatin to set quickly - so you may need to pop the whole mixture back into the saucepan for a minute to dissolve once more. Although try not to let it get hot or it will kill the probiotics in the kefir.
