Oat & Sunflower Seed Cookie

If you have never baked cookies with sunflower seeds before then this is your sign to try it - sunflower seeds give cookies a deliciously chewy texture and they taste amazing! These are my flourless oat and sunflower seed cookies and they are honestly one of my favourite cookies I've ever made. They're perfect for lunchboxes and full of all the good things including my favourite collagen for a protein boost. This recipe is also a slightly larger batch as I find 12 cookies just never last long in my house.


Makes 16 cookies


Ingredients:

1 cup rolled oats

1.5 cups sunflower seeds

1/2 cup desiccated coconut

1/2 tsp bi carb soda

4 tbsp collagen*

1 egg

5 tbsp butter

4 tbsp honey

1 tsp vanilla extract

1/3 cups dark choc chips to top


1) Preheat the oven to 180 degrees and line two baking trays with baking paper


2) Blend the oats and sunflower seeds together in a high-speed blender until it resembles flour


3) Add all dry ingredients to a bowl and mix to combine


4) Crack in the egg and gently whisk


5) Melt the butter and honey together in a small saucepan, and once slightly cooled, pour into the dry ingredients


6) To the bowl add the vanilla extract too, mixing well to incorporate


7) Wet your hands slightly and roll into balls, squishing them down a little to form cookies. Top with the chocolate chips


8) Bake in the oven for roughly 12 minutes until golden


  • Note the cookie batter is supposed to be a bit sticky, which is why wetting your hands slightly will help to form the balls
